I get what you mean but I think it would be "difficult" to please gamers with a project like this. If you limit your game to an adaptation of a movie, it would be quite limited in term of scope, and people who thinking about their dream star wars game probably want freedom, lot of exploration etc, which might not be possible if you have to follow the context of a movie.
Movie tied creates a lot of obstacles, you might be able to create a decent action / narrative game, but I think people, or at least that's my case, want more than just this for a big star wars game. I'm also not sure many people would be that excited about going through the events of the movies again, no surprise, everything you already know, I don't know...
I also think most of the good stuff from star wars is stuff outside of the movies, especially if you count the sequel and prequel trilogies... People love stuff like Kotor or Jedi Knight because they expand that world and can tell new stories without being stuck by what the movies allow you to tell.
It works for LEGO games because they're very goofy, not taking themselves seriously so deviating from the movies event and having ton of random stuff isn't shocking there.
Personally I would be more interested in an original story in a "The Mandalorian" style. It could let you visit familiar places if you're looking for nostalgia and stuff, but for the interest of the game, the Star Wars universe is rich enough to create something outside the context of the movies. I'm also personally pretty tired of the whole skywalker thing and I prefer things outside of that context.
