Yeah this is a nothing burger. It was curated for the state of play so they wouldn't spoil any real quest.
It's basically how vertical slices tend to work. Build out a slice for presentation using in-development assets, polish them up, present something that's indicative of the type of content the final game will have but not exactly.
There's old builds of OoT with tons of content never in the final game including a special SpaceWorld presentation/demonstration with completely different assets from the final one recently discovered. It's nothing "deceptive" if that's what some are suggesting or want to suggest: when it comes to building out actual levels/stages etc. things can change quite late into development.
Now if the footage at that SoP was using CG assets to represent gameplay, but was just an elaborate cinematic, that would've been a lot more concerning. Or using touched-up assets way beyond what the final in-game will use (slight reduction in certain parts of certain assets isn't the same as selling bullshots IMO), that would've potentially been a major issue if the final game didn't end up looking as good as it does.
Altho it isn't the only way to present content for demonstration purposes, without spoiling quest content/story details, it's become a more popular one. I think Marvel are pretty well-known for it with their movies in development.

Unless the person that plays it is super pro, I dont see how those movements are possible. Maybe I am shit player, and the system doesnt respond me faster.
They are probably just really good with the controls, it's not unusual for these kind of demonstrations/presentations. They're way better than I am currently, too (tho I'll eventually get the hang of things with more practice).
